This curry is based on the classic European blend while attempting to capture the flavors of South Indian cuisine. It is very mildly spicy and offers a beautiful balance thanks to the freshness of coriander and cardamom and the warmth of mustard, ginger, and pepper. To create this blend, all the spices were ground together to harmonize their aromas.
