A wonderful blend inspired by the scent of gingerbread made from cinnamon and ginger with sweet clover (called “field vanilla”), rosebuds, white Malabar pepper (for its earthy notes, “the note dirty in the style of Beauty and the Beast,” he says), long red pepper (honeyed, vanilla), fenugreek for its maple syrup flavor, fir cones for their resinous, wintery notes and vanilla! Here, it comes from Papua New Guinea, chosen by Roï for its candied and leathery notes.
