Timur Whole Bio

This Organic Timur grows wild in the Bardyia district of southwestern Nepal. Harvested by hand within a protected area, these incredible little berries boast a powerful aroma of citrus, intensely fruity grapefruit, and passion fruit, interwoven with amber and aniseed notes. On the palate, these berries have a mild tingle but pleasantly warm the mouth, while also providing a refreshing sensation. Surprisingly, these berries slightly numb the tongue when chewed.

Timur berry, also known as "grapefruit pepper", comes from a thorny plant in the citrus family and is therefore not a true pepper, in the strict sense of the term.

Only the skin of this small fruit is eaten, not the bitter seeds. To achieve this, the berries are dried and undergo three or four consecutive sorting processes on a wooden screen to obtain perfectly clean berries, free of branches, dust, and above all, seeds.
