Dukkah with wild pistachios

This dukkah is a flavorful, rich, crunchy, and easy-to-use mix. Originating in Egypt, it traditionally contains sesame seeds, coriander, cumin, fennel, thyme, and salt. Pepper and roasted hazelnuts were also often added. This mix, like the Za'atar , a balanced and inexpensive meal thanks to its protein, mineral and vitamin content.

In this dukkah, the flavor of roasted pistachios and hazelnuts immediately envelops the palate. This is followed by lemony notes of coriander and cumin, and a subtle touch of spice from pepper and thyme. It is intentionally very lightly salted.
